
I’m a big fan of fusion food and these Chicken Tikka Fajita Wraps blend together Indian and Mexican flavours perfectly. The chicken tikka filling is spiced beautifully with the addition of red onions and bell peppers for that fajita aspect. The wraps are also filled with a spicy smashed avocado that is another beautiful fusion that nods towards a guacamole. These are perfect for a quick and easy meal for weeknights.
Ingredients:
- Chicken Tikka Marinade:
- 1kg chicken thigh pieces cubed
- 1.5 tbsp kasuri methi
- 1.5 tsp salt, 1.5 tsp garam masala
- 1 tsp coriander, 1 tsp cumin, 1 tsp amchoor
- 3 tsp kashmiri chilli
- 2 tsp smoked paprika
- 1/2 tsp black pepper
- 1/4 tsp cinnamon
- 2 tbsp gram flour
- 1 tsp crushed garlic
- 1 tsp crushed ginger
- 4 tbsp oil
- 4 heaped tbsp Greek yoghurt
- 4 heaped tbsp double cream
- ghee for cooking
- 1/4 measuring cup double cream for cooking
- 1/4 measuring cup fresh coriander
Other ingredients: - 1 small red bell pepper
- 1 small green bell pepper
- 1/2 yellow green bell pepper
- 1 medium red onion
- avocadoes, chilli flakes, salt and lemon juice for spicy avocado smash
- Large tortilla wraps
- fresh coriander
Method:
● In a large bowl, add the chicken thigh pieces. Pour all the marinade ingredients into this bowl and mix into the chicken thoroughly until well coated.
● Leave to marinate for 30 minutes or you can cook immediately if in a rush.
● Heat up some ghee in a pan, add the chicken and any leftover marinade. Cook on high heat until the chicken juices are released.
● Add the sliced red onion and bell peppers and continue to cook on high until the sauce starts to thicken slightly.
● Cover and simmer for 10 minutes.
● After this time, uncover, turn up the heat and cook on high until you have a thick sauce that is coating the chicken. It shouldn’t be runny as it won’t hold well in the wraps.
● Stir through the double cream and fresh coriander. Turn off the heat and let cool slightly.
● To make the spicy avocado smash, smash together a soft avocado with salt and chilli flakes.
● To make a mint yoghurt sauce, mix together 1 cup of Greek yoghurt with 1 tbsp of mint sauce.
● Assemble your wraps with large tortilla wraps, spreading on some spicy avocado smash, the chicken tikka fajita filling, mint yoghurt sauce and fresh coriander before wrapping.
Tips:
● Using chicken thigh pieces will give so much flavour to this easy dish. Cut into 1 inch cubes.
● The chicken tikka fajita filling should have a thicker sauce, so it’s easier to fill the wraps without making them soggy.
● The filling can be made in advance and used for other dishes as well. Some ideas include sandwiches, pastries, pastas, on top of rice and more.
