
I make this potato salad when I want a really delicious potato salad, but don’t want to make one that takes a lot of time and ingredients. This comes together quickly with a handful of ingredients, but ia so full of flavour, it hits that craving for potato salad perfectly.
Ingredients:
- 20 new or baby potatoes
- 1/4 cup mayonnaise
- 1 tbsp evaporated milk
- 1tbsp lemon juice
- 1 tsp dried parsley
- 1/2 tsp English mustard
- 1/2 tsp freshly ground black pepper
- 1/4 measuring cup crispy fried onions
- salt to taste
Method:
● Keeping the skin on the potatoes, slice in half and boil in a pot of salted water until fork tender.
● Drain the potatoes and lay out on a plate to cool quickly.
● To make the dressing, mix together all of the other ingredients, apart from the fried onions, until creamy and emulsified.
● Place the cooled potatoes in a medium bowl, add the dressing and the fried onions. Mix through until the potatoes are well coated. ENJOY!
Tips:
● This can be prepared ahead of time and stored in an airtight container in the fridge.
