
These Chilli & Lime Chicken Skewers are an absolute dream. Perfectly seasoned chicken thigh pieces, air fried and then coated with a zingy, limey, zesty chilli and lime sauce that will have your tastebuds dancing. Serve with a side of spicy rice or a creamy potato salad to make a quick and easy weeknight dinner.

Ingredients:
● 1kg chicken thigh cubed
Marinade:
● 1/4 measuring cup greek yoghurt
● 1 tbsp each of smoked paprika, normal paprika, garlic granules, thyme, parsley and sumac
● 1tsp black pepper
● 1tsp chilli flakes or to taste
● Salt to taste
● Juice of half a medium lime
● 1/4 cup oil
Sauce:
● 25g melted butter
● 2.5 tbsp Frank’s hot sauce
● 3 tbsp mayonnaise
● Juice of half a medium lime
● 1 tsp finely grated lime zest
● Finely diced red and green chillies to taste
● 1/4 tsp each of himalayan salt, garlic granules, smoked paprika, black pepper, chilli flakes and parsley
● 1 level tbsp honey
Method:
● Soak wooden skewers for a couple of hours or at least for 30 minutes before cooking the chicken.
● Preheat the air fryer on 180C.
● In a medium bowl, place your chicken thigh pieces and add all the marinade ingredients. Mix really well with the chicken. Leave to marinate overnight for best results or at least for 1 hour.
● Place the chicken pieces on a skewer. I would use about 6 pieces on each skewer for the cooking time.
● Air fry the skewers for 30 minutes, making sure to turn half way, basting with the chicken juices when turning.
● You can also oven bake, grill or pan fry if you wish. Make sure to adjust the cooking time.
● While the skewers are cooking, make the sauce. Whisk together all the sauce ingredients until they come together into a creamy sauce that has emulsifiers well.
● The chicken skewers should be done after 30 minutes or check to see if cooked through and cook longer if needed. They should have a slight char on the outside.
● As soon as they are done, brush or spoon on the sauce generously.

Tips:
● Using chicken thigh pieces will give you a more succulent chicken skewer.
● Frank’s hot sauce is best for this dish, but you can use any other hot sauce you like.
● Smaller wooden skewers are ideal for the air fryer. Make sure to soak these to avoid the skewers burning too much.
